Welcome to another addition of the Instant Pot Roundup featuring recipes to boost your immunity! As we move into colder months and continue to combat a global pandemic, it’s important to pay attention to what we’re eating and chose foods that can help our bodies be strong and healthy.
This doesn’t just mean soups! In fact, I’ve tried to bring together recipes that would appeal to everyone and have a lot of flexibility in terms of storage and convenience. Of course, there are a couple of soup and soup-based dishes because hey, it’s cold out there 😉

In my opinion, you can’t get a better taste explosion than putting carrot and ginger together. Not only do they taste great, but they’re a powerful immunity boosting couple. Carrots are very nutritious and have a ton of benefits but from an immunity perspective, they contain vitamins A, B and B6, which are known to protect immune cells and provide optimal immune response. Ginger also packs a punch and can help fight infection.

I always felt that cauliflower was broccoli’s forgotten cousin so I was really happy when it started to gain popularity again. It truly is a super-food that totes the benefits of anti-aging properties and can also be anti-inflammatory. The list of goes on and on, which makes this hearty vegetable a good choice to boost your overall body health.
It’s super easy to incorporate health eating when the ingredients are staples in your house, which is true for me when it comes to this recipe. The Mashed Cauliflower recipe from Sweet Peas and Saffron can easily be made ahead of time and is just a useful staple to have in the fridge. It’s the perfect substitute for mashed potatoes!
Instant Pot Chana Masala
Often called a “superfood”, chickpeas are an easy way to add a healthy boost of nutrients to your daily diet (hummus anyone?). I could probably talk about how good they are all day but the bottom line is that they offer a wide range of benefits, including protection against disease.
