NEW Instant Pot Round Up – The Summer Edition!

Hello my Instant Pot friends! I’d first like to say thank you for all the love my 5 Things You Should Never Put In Your Instant Pot post has received. I’ve been overwhelmed by all your comments and page visits!

I’m also getting a lot of requests for new recipes to try out and I definitely don’t want to disappoint! Unlike past roundups, I haven’t tried all these recipes myself but they are the top seven I have on my summer must-make list! Yum.

Personally, I find summer recipes to be a bit difficult to find for the IP because I’m looking for sharper, crisper flavours that the Instant Pot doesn’t really deliver. Typically, I prefer using my Instant Pot for comfort food when the weather gets cooler and my tummy wants something hearty. But I couldn’t stand leaving my favourite appliance on the shelf for the next four months so I looked and looked until I found these gems, which I’ve summarized for you here!*

Simply a summer staple, no backyard bbq would be complete without corn on the cob. This easy recipe is sure to deliver the perfect balance of crisp and juicy without heating up your kitchen with a huge boiling pot of water.

Potato Salad

I think I may have a hundred potato salad recipes and I love them all! But I don’t have one that’s as fast to make as this one and I can’t wait to add it to my summer rotation. I might add some chopped up bacon to give it a little extra crunch.

Shredded Chicken

When you have some shredded chicken in your fridge, you have the base for a ton of delicious recipes. There are so many sandwich, salad and even dip ideas that are made better with this recipe as your starting point.

Baked Beans

I was pleasantly surprised to find that my kids love baked beans, which to be honest is probably because they’re candy-sweet! But, I was not thrilled with how long an oven-style recipe can take!! Finding this recipe is going to save me a whole lot of time in the kitchen, that’s for sure.

Shrimp Boil

I’m the most excited about this recipe…. Seriously, look at it! I absolutely love a good boil because it’s filled with messy goodness and is fun for the whole family. It won’t be long before this appears on my table.

Artichokes

My husband loooooves artichokes and I looooove burrata cheese so when I found this recipe, I may have actually squealed in happiness. I’m already picturing a plate of this, on the patio at sunset with a glass of crisp, white wine. I can’t wait!

Pulled Pork Tacos

Last but not least, every summer needs some tacos. Okay – to be completely honest – every time of year needs tacos, am I right? I picked a pork taco for this roundup because I wanted to add an alternative to the red-meat heavy bbq menus you often see in summer.
