It feels like forever and a day since I’ve posted an Instant Pot Roundup… mainly that’s because I’m still enjoying all the other recipes!
But, I have been expanding my IP horizons and experimenting with some desserts lately. Yum, yum. To get us started, here’s one of my own creations that my family loved. Following are others I’m definitely going to try out in the weeks to come.
It’s hard not to love a good brownie but I often find that they come out too dry when I make them in the oven or not fully cooked. I haven’t managed to figure out that exact, right time. But in the Instant Pot, these came out super moist! Literally, melt in your mouth moist. Be forewarned: These do take longer in an IP than in an oven but the result to sooooooo worth it.
Instant Pot Brownies
- Pressure Cooker
- 3/4 cup Melted Butter
- 3/4 cup Sugar
- 2 Eggs
- 3/4 cup Flour
- 3/4 cup Cocoa Powder
- 1/2 tsp Baking Powder
- 1/2 tsp Salt
- 1/2 cup Milk Chocolate Chips
- 1/2 tsp Cayenne Pepper (Optional)
- In a large bowl, whip butter until it's creamy.
- Beat in sugar and eggs.
- Add Flour, Cocoa Powder, Baking Powder, and Salt. Gently mix by hand until the batter is well blended. If you want an extra kick to your brownies, add Cayenne Pepper to the mix.
- Fold in chocolate chips.
- Add a trivet to your instant pot insert and about 1.5 cups of water. Do not cover the trivet with water.
- Add the brownie mixture to a 7 inch spring form pan. Cover loosely with aluminum foil.
- At this point, I'd recommend creating a long "handle" to go under and over your spring form pan. This will make it easier to lift it out of the IP, once it's baked.
- Lower pan into your insert. Close the lid and set your Instant Pot to 45mins. This may seem like a long time but trust me, these brownies are SUPER moist!!
- Once the time is reached, let steam manually escape for about 15mins. Quick release after that, if needed.
- Gently lift pan out of the IP and let cool for about 10 mins.
- Cut into squares and enjoy! An added scoop of ice cream never hurts 😉

Anyone who does a lot of IP baking will tell you that cheesecake is a MUST try. I can’t wait to get my hands on this incredible-looking dessert. Cheese cake topped with salted-caramel?!? Yes, please!!
Mini Boston Cream Pie Bites
After buying an egg-bite mold, I realized I don’t like egg-bites! So the mold has been sitting in my cupboard, neglected. I’ve been searching for a recipe that would allow me to repurpose this accessory and I think this just might be it! An added bonus is that the recipe uses a box-cake mix so it’s super easy to put together. I’m drooling.
Nothing says “comfort” better than a hot apple crisp. Especially in the fall, when apples are a-plenty and the outside temperatures start to drop, this recipe is sure to be made on rotation. Mmmmm….
Having grown up in a bakery that my parents owned, I can tell you that a good pound cake recipe will take you far in the dessert department. It’s delicious on it’s own but is also an amazing base for your imagination! I plan to make this topped with strawberries and whipped cream in the summer. For now, I’m going to keep it super-simple and spread some Nutella on top… my son will love me for it!
